Ingredients:

  • 2 unagi fillets (grilled eel)
  • 2 cups cooked Japanese rice
  • Furikake seasoning (available at Japanese grocery stores or online)
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 2 tablespoons sake (Japanese rice wine)
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • Green onions, chopped (optional garnish)

Instructions:

  1. Prepare the unagi fillets by removing the bones if necessary. If you're using pre-cooked unagi, you can skip this step.
  2. In a small saucepan, combine the soy sauce, mirin, sake, and sugar. Heat the mixture over medium heat until the sugar dissolves and the sauce becomes slightly thickened.
  3. Preheat your broiler or grill. Brush the unagi fillets with the sauce mixture and place them under the broiler or on the grill. Cook for a few minutes on each side until the eel is heated through and slightly caramelized.
  4. While the unagi is grilling, heat the vegetable oil in a separate pan over medium heat. Add the cooked rice and stir-fry it for a minute or two to heat it up.
  5. Place the cooked rice in serving bowls. Remove the unagi from the grill and cut it into smaller pieces. Arrange the unagi on top of the rice.
  6. Sprinkle furikake seasoning generously over the unagi and rice. Furikake typically contains a mixture of dried seaweed, sesame seeds, dried fish, and other seasonings. You can choose your preferred furikake variety or mix multiple types.
  7. Garnish with chopped green onions if desired, and serve the unagi donburi hot.
